Homemade Marshmallow-Treat Recipe

Ingredients
- 3 packets of unflavored gelatin
- 1 cup of cold water
- 1 1/2 cups of granulated sugar
- 1 cup of corn syrup
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 3/4 cup of confectioners’ sugar
- 1/4 cup of cornstarch
Directions
- Line a 9×13-inch baking dish with parchment paper and dust with some confectioners’ sugar and cornstarch mixture.
- In a mixing bowl, combine the gelatin with 1/2 cup of cold water and let it sit for about 10 minutes.
- Combine the sugar, corn syrup, salt, and the remaining 1/2 cup of water in a saucepan over medium heat and stir continuously until the sugar dissolves.
- Once the sugar dissolves, increase the heat and bring the mixture to a boil, then reduce heat to medium and let it boil for about 15 minutes.
- Take the sugar syrup mixture off the heat and gradually pour it over the gelatin mixture, while beating with a hand mixer until the mixture becomes thick and fluffy.
- Add vanilla extract and continue beating the mixture until it becomes stiff, which takes about 12 – 15 minutes.
- Pour the mixture into the prepared baking dish and smooth the top using a lightly greased spatula.
- Dust the top of the marshmallow with more confectioners’ sugar and cornstarch mixture and let it rest for about 4 hours or overnight to set.
- Once the marshmallow has set, remove it from the baking dish and cut it into any shape of your choice before serving.
