Melon and gingerbread tarts

Melon and Gingerbread Tarts Recipe

Ingredients

  • 1 small/medium honeydew melon
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 tbsp freshly grated ginger
  • 1 box of pre-made mini tart shells
  • Whipped cream or vanilla ice cream for serving (optional)

Instructions

  1. First, prepare the melon by removing the skin and seeds and cutting it into small cubes. Set aside.
  2. In a small saucepan, mix the sugar, water, and grated ginger and bring it to a simmer over medium heat. Stir frequently until the sugar has dissolved completely.
  3. Remove the ginger syrup from the heat, and let it cool for a few minutes.
  4. Add the cubed melon to the ginger syrup, and stir gently until the melon has evenly coated over the syrup
  5. Spoon the melon mixture into the pre-made mini tart shells.
  6. Cover and refrigerate the tart shells with melon overnight or for at least 2-3 hours to allow the flavors to meld.
  7. Serve the melon tarts chilled with a dollop of whipped cream or vanilla ice cream, if desired.

Verdict

This creative combination of melon and gingerbread provides a delightfully refreshing and flavorful dessert option. The sweetness and tartness of the melon work beautifully with the warmth and spice of the gingerbread. This recipe is easy to make, and best served chilled, perfect for warm weather. The addition of whipped cream or ice cream makes it even more indulgent, but the tarts are equally delicious on their own.

Serving Suggestions

Sprinkle some chopped nuts, berries, or mint to the top of the tarts as an extra garnish for an elegant presentation. These tarts would be perfect to serve with a glass of sparkling wine or a pleasant light tea. Enjoy!
