Melon and Red Fruit Terrine Recipe

Ingredients:

  • 1 small ripe melon
  • 1 pint of raspberries
  • 1 pint of strawberries
  • 1/4 cup of sugar
  • 1/4 cup of water
  • 2 envelopes of unflavored gelatin
  • Mint leaves for decoration (optional)

Instructions:

  1. Slice the melon in half and scoop out the seeds.
  2. Using a melon baller, scoop out small balls of melon and place them in a bowl. Set aside.
  3. In a separate bowl, slice the strawberries and mix them with the raspberries and melon balls.
  4. In a saucepan, heat the sugar, water, and gelatin over low heat until the sugar has completely dissolved. Remove from heat.
  5. Pour the mixture over the fruits and stir until well combined.
  6. Slowly pour the mixture into a terrine mold (or a loaf pan will do). Refrigerate for at least 3 hours or until fully set.
  7. To serve, gently run a knife around the edges of the mold and invert onto a plate. Slice and garnish with mint leaves.
