Melon carpaccio – Delicious


Melon Carpaccio

Ingredients:

  • 1 ripe honeydew melon
  • 1/2 small red onion, thinly sliced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup chopped fresh mint
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Cut the honeydew melon in half and remove the seeds. Use a vegetable peeler or a knife to remove the rind. Thinly slice the melon and arrange the slices on a platter.
  2. Add the sliced red onion over the melon slices
  3. In a small bowl, whisk together the balsamic vinegar, honey, and olive oil. Season with a pinch of salt and pepper.
  4. Drizzle the balsamic dressing over the melon and onion slices
  5. Sprinkle chopped mint on top of the melon.
