Melon, Feta and Basil Soup Recipe

Ingredients:

  • 1 large melon, peeled, seeded and cut into cubes
  • 2 cups crumbled feta cheese
  • 1/2 cup fresh basil leaves, roughly chopped
  • 1/4 cup honey
  • 1/4 cup white wine vinegar
  • 1/4 cup olive oil
  • 2 cups vegetable broth
