Melon in Mint Syrup
Ingredients:
- 1 ripe melon (cantaloupe, honeydew, or watermelon)
- 1 cup granulated sugar
- 1 cup water
- 1/4 cup fresh mint leaves, chopped
Instructions:
- Cut the melon into bite-sized cubes or use a melon baller to scoop out small melon balls.
- In a saucepan, combine the sugar, water, and mint leaves. Heat over medium heat until the sugar dissolves.
- Bring the syrup to a boil and then reduce the heat to a simmer. Cook for 5-7 minutes until the syrup thickens slightly and the mint flavor infuses the syrup.
- Remove the syrup from the heat and strain through a fine-mesh sieve to remove the mint leaves.
- Pour the syrup over the melon cubes/balls and toss gently to coat.
- Refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve chilled.
Verdict:
This melon in mint syrup is a refreshing and light dessert perfect for hot summer days. The sweet melon pairs perfectly with the cool, minty syrup. It’s also a great way to use up any leftover melon you may have in the fridge.
