Meringue Hedgehog Recipe

Ingredients

  • 4 large egg whites, at room temperature
  • 1/2 teaspoon cream of tartar
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Mini chocolate chips or chocolate sprinkles for decorating

Instructions

  1. Preheat your oven to 200°F (90°C) and line a baking sheet with parchment paper.
  2. In a clean and dry mixing bowl, beat the egg whites on medium speed until frothy.
  3. Add the cream of tartar and beat the egg whites until soft peaks form.
  4. Next, gradually add the sugar to the egg whites while continuing to beat on high speed until stiff peaks form and the meringue becomes shiny and white.
  5. Finally, stir in the vanilla extract.
  6. Scoop the meringue into a piping bag with a large round tip, and pipe a large oval shape onto the prepared baking sheet, then pipe smaller circles onto the sides and top of the oval to resemble the spines of a hedgehog.
  7. Decorate the hedgehog with mini chocolate chips or chocolate sprinkles for eyes and nose.
  8. Bake the meringue hedgehog for 1 1/2 to 2 hours, until the outside is dry and crisp to the touch but the interior is still soft and marshmallow-like.
  9. Allow the meringue to cool completely on the baking sheet before carefully transferring it to a serving platter or cake stand.
