Meringue Roasted Cherries and Strawberries Recipe
Ingredients:
- 1 cup cherries, pitted and halved
- 1 cup strawberries, hulled and quartered
- 1/4 cup granulated sugar
- 1/4 cup cornstarch
- 3 egg whites
- 1/2 cup granulated sugar
- 1/4 tsp cream of tartar
Directions:
- Preheat oven to 350°F (175°C).
- In a medium bowl, mix cherries, strawberries, 1/4 cup sugar, and cornstarch until fruit is coated.
- Spread fruit mixture on a baking sheet lined with parchment paper.
- In a separate large bowl, beat egg whites and cream of tartar with an electric mixer until stiff peaks form.
- Gradually add 1/2 cup of sugar to egg whites, beating constantly until the mixture is glossy.
- Spoon the meringue over the fruit mixture.
- Bake for 30-35 minutes or until the meringue is golden brown.
- Serve warm or cold.
