Millionaire Shortbread Recipe
Ingredients
- For the shortbread:
- 225g plain flour
- 175g unsalted butter, softened
- 75g caster sugar
- For the caramel:
- 150g unsalted butter
- 150g caster sugar
- 2 x 397g cans of condensed milk
- For the topping:
- 300g milk chocolate
Instructions
- Preheat the oven to 180°C/gas mark 4 and line a 30 x 20cm baking tin with greaseproof paper.
- Start by making the shortbread. Mix the flour and sugar in a bowl, then rub in the butter until the mixture comes together as a dough.
- Press the dough into the bottom of the prepared tin and prick all over with a fork. Bake for 20-25 minutes or until lightly golden. Set aside to cool.

- Melt the chocolate in a bowl set over a pan of simmering water. Pour over the cooled caramel layer and spread evenly. Leave to set.
