Mince Pies ⋆ Authentic English Recipe
Ingredients:
- 225g plain flour
- 100g butter, cut into cubes
- 1 tbsp caster sugar
- 1 egg yolk
- 2-3 tbsp cold water
- 410g jar of mincemeat
- Milk
- Icing sugar, for dusting
Instructions:
- Preheat the oven to 200C/180C fan/gas 6.
- To make the pastry, mix the flour and butter together in a bowl until the mixture resembles breadcrumbs.
- Stir in the caster sugar. Add in the egg yolk and enough water to form a soft dough.
- Roll out the pastry on a floured surface to about the thickness of a pound coin. Using an 8cm fluted cutter, cut out 12 circles and use to line a 12-hole bun tin.
- Fill each pastry case with mincemeat.
- Re-roll the remaining pastry and cut out 12 smaller circles using a 6cm cutter. Brush the edges of the pastry with milk and place a smaller circle on top of each mincemeat-filled pie. Press the edges together to seal.
- Brush the tops with milk and then bake for 15-20 minutes, or until the pastry is golden and crisp.
- Dust with icing sugar before serving.
