Mini Candied Fruit Tartlets Recipe
Ingredients
- 1 cup all-purpose flour
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into pieces
- 1 large egg yolk
- 1 tablespoon ice water, or more as needed
- 1/2 cup mixed candied fruit, chopped finely
- 1/4 cup apricot jam
Instructions
- Combine the flour, sugar, and salt in a food processor. Add the butter and pulse until the mixture is crumbly.
- Add the egg yolk and enough ice water so that the mixture comes together to form a ball of dough.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Preheat the oven to 375°F.
- Roll out the dough on a floured surface to a thickness of about 1/8 inch. Use a 2-inch cookie cutter to cut out rounds of dough.
- Press the rounds into mini tartlet tins, and prick the bottoms with a fork. Bake the tartlet shells for 10 minutes, until lightly browned.
- Mix the chopped candied fruit with the apricot jam in a small bowl. Spoon a teaspoonful of the mixture into each tartlet shell.
- Bake the tartlets for an additional 5-7 minutes, until the filling is bubbly and the crust is golden brown. Allow the tartlets to cool in the tins for a few minutes before transferring them to a wire rack to cool completely.
Serving Suggestions
Serve the mini candied fruit tartlets as a sweet treat alongside a cup of tea or coffee. They also make a lovely addition to a dessert platter, or as a snack when hosting a gathering.
