Mini Candied Fruit Tartlets Recipe

Ingredients

  • 1 cup all-purpose flour
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into pieces
  • 1 large egg yolk
  • 1 tablespoon ice water, or more as needed
  • 1/2 cup mixed candied fruit, chopped finely
  • 1/4 cup apricot jam

Instructions

  1. Combine the flour, sugar, and salt in a food processor. Add the butter and pulse until the mixture is crumbly.
  2. Add the egg yolk and enough ice water so that the mixture comes together to form a ball of dough.
  3. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  4. Preheat the oven to 375°F.
  5. Roll out the dough on a floured surface to a thickness of about 1/8 inch. Use a 2-inch cookie cutter to cut out rounds of dough.
  6. Press the rounds into mini tartlet tins, and prick the bottoms with a fork. Bake the tartlet shells for 10 minutes, until lightly browned.
  7. Mix the chopped candied fruit with the apricot jam in a small bowl. Spoon a teaspoonful of the mixture into each tartlet shell.
  8. Bake the tartlets for an additional 5-7 minutes, until the filling is bubbly and the crust is golden brown. Allow the tartlets to cool in the tins for a few minutes before transferring them to a wire rack to cool completely.

Serving Suggestions

Serve the mini candied fruit tartlets as a sweet treat alongside a cup of tea or coffee. They also make a lovely addition to a dessert platter, or as a snack when hosting a gathering.
