Mini Couscous with Crushed Tomato and Sweet Pepper Recipe
Ingredients:
- 1 cup couscous
- 1 cup water
- 1/4 cup diced sweet pepper
- 1/4 cup crushed tomatoes
- 2 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp salt
- Parsley leaves, chopped (for garnish)
Instructions:
- In a medium-sized pot, bring water to a boil. Add couscous, stir briefly and cover with a lid. Turn off the heat and let it sit for 5 minutes.
- Fluff the couscous with a fork and transfer it to a large mixing bowl.
- Heat the olive oil in a pan over medium-high heat. Add minced garlic, sweet pepper, cumin, paprika, and salt. Sauté until the pepper is slightly tender, for about 2-3 minutes.
- Add crushed tomato to the pan and stir to combine. Cook for an additional 2-3 minutes until slightly thickened.
- Pour the tomato-pepper mixture over the couscous and stir to combine. Mix well until the couscous is evenly coated.
- Transfer the couscous to a serving bowl and sprinkle with chopped parsley leaves.
Serving suggestions:
Serve the mini couscous as an appetizer dish for your guests on small plates or in individual small bowls.
