Mini Couscous with Crushed Tomato and Sweet Pepper Recipe

Ingredients:

  • 1 cup couscous
  • 1 cup water
  • 1/4 cup diced sweet pepper
  • 1/4 cup crushed tomatoes
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • Parsley leaves, chopped (for garnish)

Instructions:

  1. In a medium-sized pot, bring water to a boil. Add couscous, stir briefly and cover with a lid. Turn off the heat and let it sit for 5 minutes.
  2. Fluff the couscous with a fork and transfer it to a large mixing bowl.
  3. Heat the olive oil in a pan over medium-high heat. Add minced garlic, sweet pepper, cumin, paprika, and salt. Sauté until the pepper is slightly tender, for about 2-3 minutes.
  4. Add crushed tomato to the pan and stir to combine. Cook for an additional 2-3 minutes until slightly thickened.
  5. Pour the tomato-pepper mixture over the couscous and stir to combine. Mix well until the couscous is evenly coated.
  6. Transfer the couscous to a serving bowl and sprinkle with chopped parsley leaves.

Serving suggestions:

Serve the mini couscous as an appetizer dish for your guests on small plates or in individual small bowls. You can also serve it alongside other Middle Eastern-inspired dishes, such as hummus, falafel, or baba ganoush.
