Mirabelle Plum Cake Recipe
Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 2 cups Mirabelle plums, pitted and halved
- 1 tsp cinnamon
Instructions:
- Preheat oven to 350°F. Grease a 9-inch round cake pan and line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Add in eggs, one at a time, followed by vanilla extract, beating well after each addition.
- Gradually add in flour mixture, alternating with sour cream, starting and ending with the flour mixture.
- Spread batter into prepared pan. Place Mirabelle plums on top of the batter, cut side up. Sprinkle cinnamon on top of the plums.
- Bake for 40 – 45 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool before slicing and serving.
