Mirabelle Plum Cake Recipe

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 cups Mirabelle plums, pitted and halved
  • 1 tsp cinnamon

Instructions:

  1. Preheat oven to 350°F. Grease a 9-inch round cake pan and line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add in eggs, one at a time, followed by vanilla extract, beating well after each addition.
  4. Gradually add in flour mixture, alternating with sour cream, starting and ending with the flour mixture.
  5. Spread batter into prepared pan. Place Mirabelle plums on top of the batter, cut side up. Sprinkle cinnamon on top of the plums.
  6. Bake for 40 – 45 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool before slicing and serving.
