Mochi Recipe

Ingredients

  • 1 pound glutinous rice flour (mochiko)
  • 1 1/2 cups water
  • 1/2 cup granulated sugar
  • Potato starch or cornstarch for dusting

Instructions

  1. In a large mixing bowl, combine the glutinous rice flour, water, and sugar. Mix well until the dough is smooth and even in texture.
  2. Transfer the dough to a microwave-safe dish and cover with plastic wrap. Microwave on high heat for 2 minutes.
  3. Remove the dish from the microwave and stir the dough well. Re-cover the dish and microwave for an additional minute. Remove the dish from the microwave and stir the dough again. Cover and microwave for another minute.
  4. Lightly dust a work surface with potato starch or cornstarch. Turn the mochi dough out onto the work surface and knead until smooth and elastic. Roll the dough out into a thin layer and cut into shapes using a cookie cutter or knife.
  5. Your Mochi is now ready to be served.
