Monkfish and Raw Ham Skewers with Chilli Sauce Recipe

Ingredients:

  • 800g monkfish fillets, cut into large chunks
  • 8-10 thin slices of raw ham, cut into strips
  • 1-2 tbsp olive oil for brushing
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 mins
  • For the Chilli Sauce:

    • 3 red chillies, seeded and roughly chopped
    • 2 garlic cloves, roughly chopped
    • 1 tbsp tomato paste
    • 2 tbsp honey
    • 1 tbsp rice vinegar
    • 1 tbsp soy sauce

    Instructions:

    1. Preheat the grill to high. Thread the monkfish and raw ham strips onto skewers in alternating fashion.
    2. Brush the skewers with olive oil and season with salt and pepper.
    3. Grill the skewers for 2-3 minutes on each side, until the fish is cooked through and the ham becomes crispy.
    4. Meanwhile, prepare the chilli sauce by combining all the ingredients in a blender and blend until smooth.
    5. Serve the skewers hot with the chilli sauce on the side.
