Monkfish and Raw Ham Skewers with Chilli Sauce Recipe
Ingredients:
- 800g monkfish fillets, cut into large chunks
- 8-10 thin slices of raw ham, cut into strips
- 1-2 tbsp olive oil for brushing
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 mins
- 3 red chillies, seeded and roughly chopped
- 2 garlic cloves, roughly chopped
- 1 tbsp tomato paste
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- Preheat the grill to high. Thread the monkfish and raw ham strips onto skewers in alternating fashion.
- Brush the skewers with olive oil and season with salt and pepper.
- Grill the skewers for 2-3 minutes on each side, until the fish is cooked through and the ham becomes crispy.
- Meanwhile, prepare the chilli sauce by combining all the ingredients in a blender and blend until smooth.
- Serve the skewers hot with the chilli sauce on the side.
- Serve the skewers on a bed of lettuce leaves, garnished with chopped cilantro or spring onions.
- Pair with a refreshing salad or grilled vegetables on the side.
- For added indulgence, serve with crispy garlic bread or polenta fries.
