Ingredients

  • 4 cups all-purpose flour
  • 1/2 cup butter, softened
  • 1/2 cup vegetable shortening
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 2 large eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/4 cup apricot jam
  • Egg wash (1 egg yolk mixed with 1 tbsp water)

Instructions

  1. In a large bowl, mix together the flour, sugar, and baking powder until well combined.
  2. Add the butter, vegetable shortening, and eggs to the flour mixture. Mix well until the dough is smooth and elastic.
  3. Gradually add the milk and vanilla extract to the dough and continue mixing until everything is well combined.
  4. Divide the dough into 12 equal portions and roll each portion into a ball.
  5. Flatten each ball and put a teaspoon of apricot jam in the center. Fold the edges of the dough around the jam and shape into a ball.
  6. Place the balls onto a baking sheet lined with parchment paper. Brush the top of each ball with egg wash.
  7. Bake the mooncakes in a preheated 325°F oven for 25-30 minutes or until the mooncakes are golden brown.
