Morello cherry clafoutis: chef's recipe (4 steps)


Morello Cherry Clafoutis

Ingredients:

  • 1 cup of fresh Morello cherries, pitted
  • 1/2 cup of all-purpose flour
  • 1/2 cup of granulated sugar
  • 3 eggs
  • 1/4 teaspoon of salt
  • 1 cup of whole milk
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of unsalted butter

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together the flour, sugar, and salt. Add in the eggs one by one, whisking well after each addition.
  3. Gradually pour in the whole milk and vanilla extract, stirring constantly until you have a smooth batter.
  4. Grease a 9-inch baking dish with the unsalted butter. Arrange the pitted cherries on the bottom of the dish. Pour the batter over the cherries.
  5. Bake for 35-40 minutes, or until the clafoutis is golden brown and set. Serve warm with a dusting of powdered sugar and a dollop of whipped cream, if desired.
