Mozzarella and Tomato Supplì Recipe

Supplì is an Italian snack prepared with stuffed rice balls; they are crispy and crunchy on the outside, and soft and chewy on the inside. This recipe uses mozzarella cheese and tomatoes to fill the rice balls.

Ingredients:

  • 2 cups Arborio rice
  • 4 cups chicken stock
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup grated Parmesan cheese
  • 2 cups breadcrumbs
  • 2 cups vegetable oil
  • 4 ounces mozzarella cheese, chopped into small cubes
  • 2 medium tomatoes, chopped into small pieces

Instructions:

  3. Reduce heat to medium and cover the pot.

  5. Remove from heat and stir in onions, garlic, and Parmesan cheese. Season with salt and black pepper to taste.
  6. Transfer the mixture to a large bowl and let it cool.
  7. Add chopped tomatoes and mozzarella cheese, mix well.
  8. Roll the mixture into small oval balls (about the size of a golf ball).
  9. Place breadcrumbs on a plate.
  10. Dip the rice balls into the breadcrumbs, ensuring they are coated evenly.
  11. In a large saucepan, heat oil over medium-high heat to 350°F.
  12. Add the balls to the pan and fry for 2-3 minutes until crispy and golden brown.
  13. Remove from oil using a slotted spoon and place on a paper towel-lined plate to remove any excess oil.
  14. Serve hot and enjoy!
