Muscat Wine Sabayon Recipe

Ingredients:

  • 6 egg yolks
  • 1/2 cup Muscat wine
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • Fresh berries for serving (optional)

Instructions:

  1. In a medium heatproof bowl, whisk together egg yolks, Muscat wine, sugar and salt.
  2. Set the bowl over a pan of simmering water and whisk continuously until the mixture thickens and doubles in volume. It should be light and fluffy and leave ribbons when the whisk is lifted. This usually takes about 6 to 8 minutes.
  3. Remove from heat and continue whisking for another minute to prevent curdling and until it cools down to room temperature.
  4. Serve immediately or chilled with fresh berries if you like.
