Mussels au Gratin Recipe

Ingredients:

  • 1.5 kg fresh mussels, cleaned and debearded
  • 2 shallots, finely chopped
  • 3 garlic cloves, minced
  • 1 cup white wine
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions:

  1. Preheat the oven to 180°C.
  2. Heat the butter in a large pot over medium heat. Add the shallots and garlic, then cook until the shallots are translucent (about 3 minutes).
  3. Add the flour and stir until it’s fully absorbed. Gradually pour in the white wine and stir until the sauce thickens.
  4. Add heavy cream to the pot and bring the mixture to boil. Reduce the heat to low and simmer for around 5 minutes until the sauce thickens.
  5. Add half of the grated Parmesan cheese, stir to combine.
  6. Add the mussels to the pot, stir and cook for 5-7 minutes until all the mussels open.
  7. Remove the mussels from the pot using a slotted spoon, and place them in a large baking dish. Pour the sauce over the mussels.
  8. Sprinkle the rest of the Parmesan cheese over the mussels.
  9. Bake in the oven for around 10 minutes until the cheese is melted and bubbly. Serve hot, garnished with chopped parsley.
