Mussels in Saffron and Chili Sauce Recipe

Ingredients:

  • 2 pounds of fresh mussels
  • 4 tablespoons of olive oil
  • 1 onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 1 red chili pepper, chopped
  • A pinch of saffron threads
  • 1/2 cup of dry white wine
  • 1 cup of chicken stock
  • A handful of fresh parsley leaves, chopped

Instructions:

  1. Clean the mussels under cold water, scrubbing off any dirt or debris from the shell.
  2. Discard any open mussels that do not close when tapped, or any with cracked shells.
  3. In a large pot, heat the olive oil over medium heat.
  4. Add the chopped onion, garlic, and chili, and sauté for 5-7 minutes until softened.

  6. Pour in the white wine and chicken stock, and bring the mixture to a simmer. Let it cook for 5-10 minutes.
  7. Now add the cleaned mussels to the pot, cover with a lid and let them steam for 4-5 minutes until they open up.
  8. Discard any mussels that do not open.
  9. Add the chopped parsley leaves and stir well.
  10. Serve the mussels in a bowl with a generous amount of sauce and a slice of freshly baked bread to mop it up.
