Ingredients

  • 2 pounds mussels, scrubbed and debearded
  • 4 tablespoons unsalted butter
  • 1 large shallot, finely chopped
  • 2 garlic cloves, minced
  • 1 cup dry white wine
  • 1 tablespoon all-purpose flour
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large saucepan, melt the butter over medium heat. Add the shallot and garlic and sauté for about 2 minutes, stirring occasionally.
  2. Add the mussels and white wine. Cover and cook for about 5-7 minutes, or until the mussels open up. Remove the mussels with a slotted spoon and set aside. Discard any mussels that do not open.
  3. Add the flour to the saucepan and whisk until smooth. Slowly pour in the vegetable broth while whisking constantly. Bring the mixture to a boil and then reduce the heat to low. Simmer for about 10 minutes.
  4. Stir in the heavy cream and parsley. Season with salt and pepper to taste.
  5. Return the mussels to the saucepan and reheat until warm. Serve immediately.
