Ingredients
- 2 pounds mussels, scrubbed and debearded
- 4 tablespoons unsalted butter
- 1 large shallot, finely chopped
- 2 garlic cloves, minced
- 1 cup dry white wine
- 1 tablespoon all-purpose flour
- 3 cups vegetable broth
- 1 cup heavy cream
- 1/4 cup chopped fresh parsley

Instructions
- In a large saucepan, melt the butter over medium heat. Add the shallot and garlic and sauté for about 2 minutes, stirring occasionally.
- Add the mussels and white wine. Cover and cook for about 5-7 minutes, or until the mussels open up. Remove the mussels with a slotted spoon and set aside. Discard any mussels that do not open.

- Stir in the heavy cream and parsley. Season with salt and pepper to taste.
