Nage of Cherries and its Granita Recipe

Ingredients:

  • 1 pound cherries, pitted
  • 1/4 cup sugar
  • 1 cup water
  • 1 lemon, juiced
  • 1/2 cup champagne or sparkling wine

Instructions:

  1. In a medium saucepan, combine the cherries, sugar, and water over medium heat. Bring to a simmer and cook for 5-7 minutes, until the cherries are soft and the sugar has dissolved.
  2. Remove from heat and strain the mixture through a fine-mesh sieve. Reserve the liquid for the nage and discard the cherries.
  3. Stir the lemon juice and champagne into the cherry liquid
  4. Place the mixture in an ice cream maker and freeze according to the manufacturer’s instructions until it reaches the consistency of granita.

Serving Suggestions:

Serve the Nage of Cherries and its Granita in a chilled bowl or glass. Garnish with fresh mint leaves or a cherry on top. Enjoy as a refreshing summer dessert or as a palate cleanser between courses of a fancy dinner.
