Nage of Cherries and its Granita Recipe
Ingredients:
- 1 pound cherries, pitted
- 1/4 cup sugar
- 1 cup water
- 1 lemon, juiced
- 1/2 cup champagne or sparkling wine
Instructions:
- In a medium saucepan, combine the cherries, sugar, and water over medium heat. Bring to a simmer and cook for 5-7 minutes, until the cherries are soft and the sugar has dissolved.
- Remove from heat and strain the mixture through a fine-mesh sieve. Reserve the liquid for the nage and discard the cherries.
- Stir the lemon juice and champagne into the cherry liquid
- Place the mixture in an ice cream maker and freeze according to the manufacturer’s instructions until it reaches the consistency of granita.
Serving Suggestions:
Serve the Nage of Cherries and its Granita in a chilled bowl or glass. Garnish with fresh mint leaves or a cherry on top. Enjoy as a refreshing summer dessert or as a palate cleanser between courses of a fancy dinner.
