Nettle cake – Delicious


Nettle Cake Recipe

Ingredients:

  • 2 cups of blanched nettle leaves
  • 2 cups of all-purpose flour
  • 1 cup of sugar
  • 1 cup of vegetable oil
  • 4 eggs
  • 1 tsp of baking powder
  • 1 tsp of vanilla extract
  • 1/2 tsp of salt

Instructions:

  1. Preheat your oven to 350°F/180°C.
  2. Grease a 9-inch cake pan with butter.
  3. In a large mixing bowl, beat eggs and sugar with an electric mixer until creamy and smooth.
  4. Add the vegetable oil, vanilla extract, and blanched nettle leaves to the mixing bowl, mix well.
  5. In another bowl, sift the flour, baking powder, and salt.
  6. Add the flour mixture to the nettle mixture, stirring until smooth with no lumps.
  7. Pour the batter into the prepared cake pan.
  8. Bake for around 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
  9. Let the cake cool down for 10 minutes in the cake pan, then turn it onto a wire rack to cool down to room temperature.
