Niçoise Salad Recipe
Ingredients:
- 1 head of lettuce
- 1 lb of cooked and chilled baby potatoes
- 1/2 lb of cooked and chilled green beans
- 4 hard-boiled eggs
- 2 small cans of oil-packed tuna
- 1/2 cup pitted Kalamata olives
- 1 small red onion, sliced thinly
- 1/4 cup of extra-virgin olive oil
- 3 tablespoons of red wine vinegar
- 1 tablespoon of Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions:
- Wash the lettuce, tear them into bite-size pieces and place in a serving bowl or platter.
- Arrange the cooked potatoes, green beans, sliced onion, and tuna on top of the lettuce. Cut the hard-boiled eggs into quarters and place on top of the salad. Add the Kalamata olives.
