Niçoise Salad Recipe

Ingredients:

  • 1 head of lettuce
  • 1 lb of cooked and chilled baby potatoes
  • 1/2 lb of cooked and chilled green beans
  • 4 hard-boiled eggs
  • 2 small cans of oil-packed tuna
  • 1/2 cup pitted Kalamata olives
  • 1 small red onion, sliced thinly
  • 1/4 cup of extra-virgin olive oil
  • 3 tablespoons of red wine vinegar
