Nonnettes with Clementines: Easy Recipe

Ingredients:

  • 1 cup honey
  • 1 cup sugar
  • 1/4 cup water
  • 1/2 cup orange juice
  • Zest of 1 clementine
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground clove
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • 2 eggs
  • 12 clementines, peeled and separated into segments

Instructions:

  1. In a large saucepan, combine honey, sugar, water, orange juice, clementine zest, cinnamon, ginger, and clove. Cook over medium heat for 5-7 minutes or until the sugar has completely dissolved. Remove from heat and let cool.
  2. Preheat oven to 375°F. Grease a muffin tin and set aside.
  3. In a large mixing bowl, combine flour, baking powder, baking soda, and salt.
  4. In a separate mixing bowl, whisk together milk, vegetable oil, honey, and eggs.
  5. Pour wet ingredients into dry ingredients and mix until well incorporated. Fold in clementine segments.
  6. Spoon batter into the muffin tin, filling each cup 3/4 full.
  7. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the muffin tin for 5 minutes, then remove and place onto a wire rack.
  9. Brush the cooled nonnettes with the honey syrup mixture.
