Nonnettes with Clementines: Easy Recipe
Ingredients:
- 1 cup honey
- 1 cup sugar
- 1/4 cup water
- 1/2 cup orange juice
- Zest of 1 clementine
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground clove
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda

- 2 eggs
- 12 clementines, peeled and separated into segments
Instructions:
- In a large saucepan, combine honey, sugar, water, orange juice, clementine zest, cinnamon, ginger, and clove. Cook over medium heat for 5-7 minutes or until the sugar has completely dissolved. Remove from heat and let cool.
- Preheat oven to 375°F. Grease a muffin tin and set aside.
- In a large mixing bowl, combine flour, baking powder, baking soda, and salt.
- In a separate mixing bowl, whisk together milk, vegetable oil, honey, and eggs.
- Pour wet ingredients into dry ingredients and mix until well incorporated. Fold in clementine segments.
- Spoon batter into the muffin tin, filling each cup 3/4 full.
- Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the muffin tin for 5 minutes, then remove and place onto a wire rack.
- Brush the cooled nonnettes with the honey syrup mixture.
