Noodle Soup with Green Vegetables Recipe
Ingredients
- 8 cups of chicken or vegetable broth
- 1 tablespoon of oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 teaspoon of grated ginger
- 1 cup of chopped green beans
- 1 cup of broccoli florets
- 2 cups of baby spinach
- 8 ounces of fresh or dried noodles
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon of lime juice
- Salt and black pepper
Instructions
- In a pot, heat the oil over medium heat. Add the chopped onion and cook for 3-5 minutes or until onion is translucent.
- Stir in garlic and ginger and cook for 1-2 minutes or until fragrant.
- Add the broth and bring it to a boil.
- Salt & pepper to taste, then add the noodles and cook according to the package directions.
- Add the green beans and broccoli florets, and cook for another 5-7 minutes.
- Add the baby spinach, fish sauce, soy sauce, lime juice, and simmer for an additional 2-3 minutes or until the spinach is wilted.
- Remove from heat and serve hot.
