Nordic Orange and Ginger Cookies
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 egg yolk
- 1 tablespoon freshly grated orange zest
- 1 teaspoon ground ginger
- 1/4 teaspoon salt
Instructions:
- Preheat oven to 350°F.
- In a medium bowl, whisk together flour, ginger, and salt.
- In a separate bowl, beat butter and sugar together until light and fluffy.
- Beat in egg yolk and orange zest.
- Add flour mixture to butter mixture and mix until combined.
- Form the dough into a ball, wrap it in plastic wrap and refrigerate for 30 minutes.
- Roll out the chilled dough on a lightly floured surface until it’s about 1/4 inch thick.
- Cut out cookies with a cookie cutter of your choice.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 10-12 minutes, or until golden brown around the edges.
- Allow cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
