Nordic Orange and Ginger Cookies

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1 tablespoon freshly grated orange zest
  • 1 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions:

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together flour, ginger, and salt.
  3. In a separate bowl, beat butter and sugar together until light and fluffy.
  4. Beat in egg yolk and orange zest.
  5. Add flour mixture to butter mixture and mix until combined.
  6. Form the dough into a ball, wrap it in plastic wrap and refrigerate for 30 minutes.
  7. Roll out the chilled dough on a lightly floured surface until it’s about 1/4 inch thick.
  8. Cut out cookies with a cookie cutter of your choice.
  9. Place the cookies on a baking sheet lined with parchment paper.
  10. Bake in the preheated oven for 10-12 minutes, or until golden brown around the edges.
  11. Allow cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
