Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt. Slowly whisk in the dashi or chicken stock and the eggs until smooth.
  2. Add the cabbage, green onions, bacon or ham, tenkasu, and parsley (if using) to the bowl and stir to combine.
  3. Heat the oil in a large nonstick skillet over medium heat. Add the batter to the skillet, flatten it into a pancake shape, and cook for about 5 minutes or until browned on the bottom. Flip the okonomiyaki, spread some sauce and mayonnaise over the top, and cook for another 5 minutes or until browned on the bottom. Serve hot, sprinkled with bonito flakes (if using).
