Ingredients:

  • ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 eggs, room temperature
  • ½ cup granulated sugar
  • 2 tablespoons orange blossom water
  • ½ cup unsalted butter, melted and cooled slightly

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Using cooking spray, grease two madeleine pans, or lightly butter and flour the cups.
  3. Whisk together the flour, baking powder, and salt in a mixing bowl.
  4. In another mixing bowl, whisk together eggs, sugar, and orange blossom water until they are fluffy and pale yellow in colour.
  5. Fold in the flour mixture, then pour in the melted butter and fold it in until the batter is smooth.
  6. Spoon the batter into the prepared madeleine pans until each mold is about ¾ full. (Optional: refrigerate the batter for about 10-15 minutes to firm it up, this helps in keeping the hump shape in the center of madeleines while baking.)
  7. Bake the madeleines for about 10-12 minutes, or until they turn golden brown and spring back to the touch.
  8. Remove the madeleines from oven and let them cool on a wire rack.
