Orange Fondant Gingerbread Recipe

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup orange marmalade
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F. Grease a 9-inch square baking pan.
  2. In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in the molasses, egg, and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Gradually add the flour mixture to the butter mixture, beating until just combined.
  4. Spread the batter evenly into the prepared baking pan. Spoon dollops of orange marmalade over the top of the batter.
  5. Bake for 25-30 minutes, or until the edges are lightly browned and a toothpick inserted into the center of the cake comes out clean.
  6. Allow the cake to cool for 10 minutes before turning it out onto a wire rack to cool completely.
  7. In a small bowl, whisk together powdered sugar and enough water to make a smooth glaze. Drizzle the glaze over the top of the cooled cake. Let the glaze set for 10 minutes before serving.
