Orange Meringue Pie Recipe

Ingredients:

  1. 1 pre-baked 9 inch pie crust
  2. For the filling:
    • 1 cup granulated sugar
    • 1/4 cup cornstarch
    • 1/4 tsp salt
    • 1 1/2 cups fresh orange juice (about 4-5 oranges)
    • 2-3 tsp orange zest
    • 4 egg yolks
    • 1/4 cup unsalted butter, cut into small pieces
    • For the meringue:
      • 4 egg whites, at room temperature
      • 1/4 tsp cream of tartar
      • 1/2 cup granulated sugar

Directions:

  1. Make the filling: In a medium saucepan, whisk together sugar, cornstarch, and salt.
  2. Add orange juice and whisk until the mixture is smooth.
  3. Place the pan over medium heat and cook, whisking constantly, until the mixture thickens and boils.
  4. Keep whisking and cook for another 1-2 minutes, until the mixture becomes very thick and pudding-like.
  5. Remove the pan from the heat and whisk in the butter and orange zest, mixing until the butter is melted and incorporated into the filling.
  6. In a separate bowl, whisk the egg yolks until smooth.
  7. Add a small amount of the hot orange filling into the egg yolks and whisk quickly.
  8. Repeat with another small amount of filling and continue to mix until the egg yolks are warm.
  9. Pour the egg yolk mixture back into the orange filling and whisk until smooth.
  10. Pour the filling into the pre-baked pie crust and smooth the surface.
  11. Preheat the oven to 375°F (190°C).
  12. Make the meringue: In a large mixing bowl, using an electric hand mixer, beat the egg whites and cream of tartar until soft peaks form.
  13. Gradually add the sugar, 1 tbsp at a time, while continuing to beat the egg whites, until stiff peaks form.
  14. Spoon the meringue over the pie filling, spreading it from edge to edge and making decorative peaks.
  15. Bake the pie for 15-20 minutes, or until the meringue is golden brown.
  16. Cool the pie on a wire rack for at least 30 minutes before serving.
