Oysters in Yuzu Jelly and Hay Smoked

Ingredients:

  • 12 medium sized fresh oysters
  • 2 cups of yuzu juice
  • 4 sheets of gelatin
  • 1 teaspoon salt
  • 2 tablespoons of honey
  • Hay for smoking

Instructions:

  1. Soak the gelatin sheets in cold water.
  2. In a saucepan bring yuzu juice and salt to a simmer.
  3. Add honey and dissolve in the liquid. Remove from heat and let it cool down for a couple of minutes.
  4. Squeeze out the water from the soaked gelatin sheets and add to the yuzu and honey mixture. Mix well.
  5. Place the mixture in a bowl and let it set in the refrigerator for at least 30 minutes.
  6. Shuck the oysters and open them up. Remove the oyster from the shell and place it on a spoon.
  7. Take the yuzu jelly from the fridge and cut it into small cubes.
  8. Place the yuzu jelly on the top of the oyster.
  9. Set up a smoke box or smoker on the stove. Place the oysters on a tray and smoke them with hay for about 2 minutes.
  10. Remove the oysters from the tray and place them on a serving plate.

Serving Suggestions:

Serve the oysters immediately while they are still warm on a bed of rock salt. Add a small wedge of lemon for extra zing.
