Oysters in Yuzu Jelly and Hay Smoked
Ingredients:
- 12 medium sized fresh oysters
- 2 cups of yuzu juice
- 4 sheets of gelatin
- 1 teaspoon salt
- 2 tablespoons of honey
- Hay for smoking
Instructions:
- Soak the gelatin sheets in cold water.
- In a saucepan bring yuzu juice and salt to a simmer.
- Add honey and dissolve in the liquid. Remove from heat and let it cool down for a couple of minutes.
- Squeeze out the water from the soaked gelatin sheets and add to the yuzu and honey mixture. Mix well.
- Place the mixture in a bowl and let it set in the refrigerator for at least 30 minutes.
- Shuck the oysters and open them up. Remove the oyster from the shell and place it on a spoon.
- Take the yuzu jelly from the fridge and cut it into small cubes.
- Place the yuzu jelly on the top of the oyster.
- Set up a smoke box or smoker on the stove. Place the oysters on a tray and smoke them with hay for about 2 minutes.
- Remove the oysters from the tray and place them on a serving plate.
Serving Suggestions:
Serve the oysters immediately while they are still warm on a bed of rock salt. Add a small wedge of lemon for extra zing.
