Oysters with Mushrooms, Tomato Chutney and Coriander Coulis
Ingredients:
- 12 fresh oysters, shucked
- 1 cup of sliced mushrooms
- 1/2 cup of tomato chutney
- 1/4 cup of coriander coulis
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions:
- Start by preparing the mushrooms. Heat the olive oil in a skillet over medium heat and add the mushrooms. Sautee for 5-7 minutes until they are tender and slightly browned. Season with salt and pepper to taste.

- To serve, place the shucked oysters on a bed of ice. Top each oyster with a spoonful of mushrooms and a dollop of tomato chutney. Drizzle a little coriander coulis over each oyster.
