Oysters with Mushrooms, Tomato Chutney and Coriander Coulis

Ingredients:

  • 12 fresh oysters, shucked
  • 1 cup of sliced mushrooms
  • 1/2 cup of tomato chutney
  • 1/4 cup of coriander coulis
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Instructions:

  1. Start by preparing the mushrooms. Heat the olive oil in a skillet over medium heat and add the mushrooms. Sautee for 5-7 minutes until they are tender and slightly browned. Season with salt and pepper to taste.
  2. Next, prepare the tomato chutney. In a separate saucepan, heat the chutney over medium heat until it comes to a simmer. Reduce the heat and let it cook for 5-7 minutes until it thickens slightly.
  3. For the coriander coulis, combine the coriander leaves and a small amount of water in a blender. Puree until smooth and then add a little olive oil until you have a smooth consistency.
  4. To serve, place the shucked oysters on a bed of ice. Top each oyster with a spoonful of mushrooms and a dollop of tomato chutney. Drizzle a little coriander coulis over each oyster.
  5. Enjoy the oysters immediately.
