Pan-Fried Clafoutis with Pistachios and Strawberries Recipe

Ingredients:

  • 1 cup strawberries, hulled and sliced
  • 1/2 cup shelled pistachios, chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 3 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 4 tbsp unsalted butter
  • Confectioners’ sugar for dusting

Instructions:

  1. In a medium bowl, whisk together flour and sugar. Add eggs one at a time, whisking after each addition until mixture is smooth. Stir in milk and vanilla extract.
  2. Heat 2 tablespoons of butter in a large skillet over medium heat. Once butter is melted and foaming, add the strawberries and cook for 2-3 minutes, or until softened. Remove from skillet, but reserve the juices.
  3. Add the remaining butter to the skillet and swirl to coat. Pour the batter into the skillet and cook for 4-5 minutes, or until the edges start to set and turn golden brown. Sprinkle pistachios over the top of the clafoutis and continue cooking until the top is set but still slightly wet in the middle, about 5-7 minutes more.
  4. Remove skillet from heat and sprinkle the cooked strawberries and their juices over the top of the clafoutis.
  5. Dust with confectioners’ sugar and serve.
