Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup whole milk
  • 1 large egg
  • 1 tbsp unsalted butter, melted
  • 1/2 cup diced apricots
  • 2 tbsp flower honey

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients, and fold together until just combined.
  4. Add the diced apricots to the pancake batter and fold.
  5. Heat a non-stick pan over medium-high heat and add 1/4 cup of batter per pancake.
  6. Cook each pancake for 2-3 minutes or until bubbles form on top, then flip and cook for another minute or until cooked through.
  7. Stack the pancakes and drizzle with flower honey before serving.
