Pancakes with Honey, Mangoes and Lemon Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons unsalted butter, melted
  • 1 mango, sliced
  • 1 lemon, zested
  • 1/4 cup honey

Instructions:

  1. In a large bowl, sift together flour, baking powder, salt and sugar.
  2. In another bowl, whisk together milk, egg and melted butter.
  3. Add wet ingredients to dry ingredients and mix well until no lumps remain.
  4. Heat a non-stick pan over medium heat. Pour pancake batter onto pan using a 1/4 cup measure. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. In a small bowl, mix together honey and lemon zest.
  6. Serve pancakes topped with sliced mangoes and drizzled with honey and lemon mixture.
