Panettone with brewer's yeast

Panettone with Brewer’s Yeast Recipe

Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 tbsp brewer’s yeast
  • ½ cup warm water
  • 1 egg + 2 yolks
  • ½ cup granulated sugar
  • 12 tbsp unsalted butter, at room temperature
  • 1 tbsp vanilla extract
  • 1 tbsp orange zest
  • 1 cup raisins
  • 1/4 cup candied orange peel

Directions:

  1. In a small bowl, whisk together the brewer’s yeast and warm water until the yeast has dissolved. Allow it to stand for about 10 minutes until the mixture becomes frothy.
  2. In a large bowl, whisk together the flour and sugar.
  3. Add the egg and yolks to the yeast mixture and whisk to combine.
  4. Add the yeast mixture to the bowl with the flour and sugar mixture, and mix well to form a sticky dough.
  5. Cut up the butter and mix it into the dough with a wooden spoon.
  6. Add the vanilla extract, orange zest, raisins, and candied orange peel to the dough, and mix everything together well.
  7. Place the dough in a greased bowl, cover it with a damp cloth, and allow it to rest in a warm place for about 2 hours.
  8. Preheat your oven to 350°F (175°C).
  9. When the dough has risen, punch it down, and shape the dough into a round loaf. Place the dough in a greased pan that’s tall enough to hold the rising dough and to keep the shape of the panettone.
  10. Cover the panettone with a damp cloth and let it rest for an additional hour, or until it has doubled in size.
  11. Bake the panettone for 40-50 minutes, or until golden brown. Remove it from the oven and let it cool completely on a wire rack before slicing and serving.
