Panisses Recipe

Ingredients

  • 1 cup garbanzo bean flour
  • 1 cup water
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 lemon, juiced
  • 2 tablespoons chopped fresh parsley
  • Oil for frying

Instructions

  1. In a medium bowl, whisk together the garbanzo bean flour, water, olive oil, salt, pepper, lemon juice and parsley until the mixture is smooth.
  2. Pour the mixture into a large saucepan, and heat it over medium heat, whisking constantly, until it thickens and begins to pull away from the sides of the pan, approximately 15 minutes.
  3. Transfer the mixture to an 8×8 inch baking dish, and smooth out the top with a spatula.
  4. Allow it to cool to room temperature before refrigerating for at least 2 hours, or overnight, until it is firm enough to slice.
  5. Once chilled, heat 1/4 inch of oil in a large skillet over medium-high heat. Cut the chilled panisse into strips, and fry them in the hot oil until they are golden-brown and crispy on the outside, approximately 3 minutes per side.
  6. Drain the panisses on a paper towel-lined plate before serving.
