Panisses Recipe
Ingredients
- 1 cup garbanzo bean flour
- 1 cup water
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 lemon, juiced
- 2 tablespoons chopped fresh parsley
- Oil for frying
Instructions
- In a medium bowl, whisk together the garbanzo bean flour, water, olive oil, salt, pepper, lemon juice and parsley until the mixture is smooth.
- Pour the mixture into a large saucepan, and heat it over medium heat, whisking constantly, until it thickens and begins to pull away from the sides of the pan, approximately 15 minutes.
- Transfer the mixture to an 8×8 inch baking dish, and smooth out the top with a spatula.
- Allow it to cool to room temperature before refrigerating for at least 2 hours, or overnight, until it is firm enough to slice.
- Once chilled, heat 1/4 inch of oil in a large skillet over medium-high heat. Cut the chilled panisse into strips, and fry them in the hot oil until they are golden-brown and crispy on the outside, approximately 3 minutes per side.
- Drain the panisses on a paper towel-lined plate before serving.
