Panna Cotta Tart with Candied Kumquats Recipe

Ingredients:

For the tart base:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/4 tsp salt
  • 2-3 tbsp ice water

For the panna cotta filling:

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 1/4 tsp unflavored gelatin powder
  • 1/4 cup whole milk

For the candied kumquats:

  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 12-15 kumquats, sliced

Instructions:

For the tart base:

  1. In a large bowl, whisk together flour, sugar, and salt.
  2. Add chilled butter into the bowl and use your fingers or a pastry cutter to work butter into the flour mixture until the mixture resembles coarse sand.
  3. In a small bowl, whisk together egg yolk and ice water. Pour this mixture into the flour mixture and mix until dough comes together.
  4. Preheat oven to 375°F. Take out the dough from the refrigerator and let it rest for 5 minutes.
  5. Roll out the dough on a floured surface until it is about 1/4 inch thick. It should be about 12 inches in diameter.
  6. Gently fold the dough and place it in a 9-inch tart pan with a removable bottom. Press the dough into the side and bottom of the pan. Trim the edge with a knife.
