Panna Cotta with Lavender

Ingredients:

  • 2 cups heavy cream
  • 1/2 cup sugar
  • 1 teaspoon dried lavender
  • 1 vanilla bean, split
  • 2 teaspoons gelatin powder
  • 3 tablespoons cold water

Instructions:

  1. In a medium saucepan over medium heat, combine the heavy cream, sugar, lavender, and vanilla bean. Heat the mixture, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling. Remove from heat.
  2. In a small bowl, sprinkle the gelatin powder over the cold water and allow it to sit for 5 minutes.
  3. Remove the lavender and vanilla bean from the cream mixture. Stir in the gelatin mixture until fully dissolved.
  4. Pour the mixture into ramekins or other serving dishes. Chill in the refrigerator for at least 2 hours or until set.
  5. Serve chilled, topped with fresh berries or whipped cream if desired.
