Instructions:

  1. Preheat oven to 350°F (175°C). Butter an 8-inch round cake pan and line with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a medium bowl, whisk together the passion fruit puree, oil, egg yolks, lime zest, and lime juice. Add to the dry ingredients and whisk until just combined.
  4. In a clean bowl with an electric mixer, beat the egg whites and cream of tartar until soft peaks form. Gradually add the sugar and beat until stiff glossy peaks form. Fold in 1/3 of the egg whites into the batter, then gently fold in the remaining egg whites until no white streaks remain. Pour into the prepared pan and smooth the top.
  5. Bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove from the oven and let cool in the pan for 10 minutes. Remove the cake from the pan and let cool completely on a wire rack.
  6. In a small saucepan, heat the heavy cream until just simmering. Pour the hot cream over the chocolate chips and let sit for 1 minute. Whisk until smooth. Let cool to room temperature, about 20 minutes. Spread the ganache onto the cooled cake.
