Pasta and Beans Recipe
Ingredients:
- 1 lb pasta
- 1 can of cannellini beans, drained and rinsed
- 1 can of diced tomatoes, drained
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp red pepper flakes (optional)
- 1 cup of vegetable broth
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped parsley
Instructions:
- Start by cooking the pasta in a large pot of salted water, according to package instructions. Drain and set aside.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic and red pepper flakes (if using) and cook for 1-2 minutes, stirring frequently, until fragrant.
- Add beans to the skillet and stir to combine with garlic.
- Add diced tomatoes, salt, pepper, and vegetable broth. Simmer for 10-15 minutes or until the sauce has slightly thickened.
- Add cooked pasta to the skillet and toss to combine with the sauce.
- Sprinkle grated Parmesan cheese and chopped parsley on top and serve hot.
