Pasta and Beans Recipe

Ingredients:

  • 1 lb pasta
  • 1 can of cannellini beans, drained and rinsed
  • 1 can of diced tomatoes, drained
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp red pepper flakes (optional)
  • 1 cup of vegetable broth
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of chopped parsley

Instructions:

  1. Start by cooking the pasta in a large pot of salted water, according to package instructions. Drain and set aside.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes (if using) and cook for 1-2 minutes, stirring frequently, until fragrant.
  4. Add beans to the skillet and stir to combine with garlic.
  5. Add diced tomatoes, salt, pepper, and vegetable broth. Simmer for 10-15 minutes or until the sauce has slightly thickened.
  6. Add cooked pasta to the skillet and toss to combine with the sauce.
  7. Sprinkle grated Parmesan cheese and chopped parsley on top and serve hot.
