Pasta with Ricotta Cheese and Basil Recipe

Ingredients:

  • 500g pasta (penne or rigatoni)
  • 500g ricotta cheese
  • ½ cup grated parmesan cheese
  • Handful of fresh basil leaves
  • 2 cloves of garlic, minced
  • 3 tbsp. olive oil
  • Salt and pepper to taste

Instructions:

  1. Boil a large pot salted water and cook pasta according to package instructions until al dente.
  2. Drain the pasta and reserve 1 cup of pasta water.
  3. While pasta cooks, in a pan over medium heat, add olive oil and minced garlic. Cook for 1-2 minutes until fragrant.
  4. Add in the fresh basil leaves and cook for another minute until wilted.
  5. Stir in the ricotta cheese and half of the reserved pasta water, to create a sauce.
  6. Add the cooked pasta to the pan and toss to coat the pasta with the sauce. If the sauce is too thick, add the remaining pasta water to thin it out.
  7. Season with salt and pepper to taste.
  8. Serve hot and sprinkle grated parmesan cheese on top.
