Ingredients:

  • 1 pound pasta (preferably short pasta like rigatoni or penne)
  • 8 ounces stracchino cheese, cut into small cubes
  • 4 ounces bresaola, sliced into thin strips
  • 1 pint cherry tomatoes, sliced in half
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 cup fresh basil leaves, chopped

Instructions:

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and reserve 1 cup of the cooking water.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute until fragrant.
  3. Add the cherry tomatoes to the skillet and sauté for 3-5 minutes until they start to burst and release their juices.
