Pavlova Lemon Meringue Pie Recipe

Ingredients:

  • 6 egg whites room temperature
  • 300g caster sugar
  • 1 tsp white vinegar
  • 1 tsp cornflour
  • 1 tsp vanilla extract
  • 1 cup heavy cream, whipped
  • 1 lemon, zest and juice
  • 1 can sweetened condensed milk
  • 3 egg yolks
  • 1/2 cup unsalted butter, melted
  • 1 premade pie crust

Instructions:

  1. Preheat your oven to 150°C/300°F. Line a baking sheet with parchment paper and spread the sugar out over it.
  2. Bake the sugar for 8-10 minutes, until the edges start to turn golden. Take the sugar out of the oven, but keep the oven on.
  3. In a bowl, whisk together the egg whites until stiff peaks form. Gradually add in the sugar, a spoonful at a time, whisking well in between each addition. Continue to whisk for a further 5 minutes until the mixture is thick and glossy.
  4. Mix in the white vinegar, cornflour and vanilla extract. Fold the mixture gently and spread it on a greased baking tray. Flatten the top, creating a slight dip in the middle. Bake the pavlova for 1 hour, until it is firm and sounds hollow when tapped.
  5. While the pavlova is in the oven, start to prepare the lemon filling. In a bowl, whisk together the egg yolks, sweetened condensed milk, melted butter, lemon zest and juice until smooth.
  6. Pour the mixture into the premade pie crust and bake for 20-25 minutes or until lightly golden and set.
  7. Once cooked, allow the pavlova and pie to cool completely.
  8. Assemble the pavlova on top of the pie by spooning a generous amount of whipped cream onto the center of the pavlova. Gently spread outwards, leaving a small border around the edge of the pavlova. Finish with a sprinkle of extra lemon zest for garnish.
