Pavlova with Mandarins: Gourmet Recipe
Ingredients:
- 4 egg whites
- 1 cup of caster sugar
- 1 teaspoon of vanilla extract
- 1 teaspoon of white wine vinegar
- 1 tablespoon of cornflour
- 300ml of double cream
- 6 mandarins, peeled and segmented

Method:
- Preheat oven to 150°C.

- Turn off the oven and leave the pavlova to cool completely in the oven with the door slightly ajar.
- In a separate bowl, whip the double cream until thick.
- Top the pavlova with whipped cream, mandarin segments and fresh mint leaves.
