Ingredients:

  • 4 egg whites
  • 1 cup of caster sugar
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of white wine vinegar
  • 1 tablespoon of cornflour
  • 300ml of double cream
  • 6 mandarins, peeled and segmented
  • Handful of fresh mint

Method:

  1. Preheat oven to 150°C.
  2. Whisk egg whites with an electric mixer until stiff peaks form.
  3. Sift in caster sugar, a little at a time, while continuing to whisk until sugar is dissolved and mixture is thick and shiny.
  4. Whisk in vanilla extract, white wine vinegar and cornflour until well combined.

  6. Place in the oven and immediately reduce the temperature to 120°C. Bake for 1 hour and 20 minutes or until crisp on the outside and soft on the inside.
  7. Turn off the oven and leave the pavlova to cool completely in the oven with the door slightly ajar.
  8. In a separate bowl, whip the double cream until thick.
  9. Top the pavlova with whipped cream, mandarin segments and fresh mint leaves.
