Pea and Mint Turnovers Recipe

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 1 cup frozen peas
  • 1/4 cup fresh mint, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat oil in a pan over medium heat. Add onion and garlic, and sauté until softened.
  3. Add frozen peas and cook for 2-3 minutes until heated through.
  4. Stir in chopped mint, salt, and black pepper. Remove from heat and let cool.
  5. Roll out puff pastry to 1/8 inch thickness. Cut into 4 squares.
  6. Place a heaping tablespoon of pea and mint filling in the center of each square.
  7. Brush edges of pastry with beaten egg. Fold pastry over the filling to form a triangle. Press edges to seal.
  8. Brush the tops of the turnovers with egg wash and place on a baking sheet lined with parchment paper.
  9. Bake for 20-25 minutes, or until golden brown and crispy.
  10. Serve hot.
