Pea and Mint Velouté Recipe

Ingredients

  • 2 cups fresh or frozen peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and garlic and cook until fragrant and softened, about 2-3 minutes.
  2. Add the broth and peas to the pot and bring to a boil. Reduce heat and simmer until the peas are tender, about 10-12 minutes.
