Peach, Pistachio and Honey Blancmange

Ingredients:

  • 2 cups of milk
  • 1/4 cup of honey
  • 1/2 cup of roasted pistachios
  • 1/2 cup of chopped fresh peaches
  • 1/4 cup of sugar
  • 2 envelopes (4 1/2 teaspoons) of gelatin
  • 1 teaspoon of vanilla extract
  • Pinch of salt

Directions:

  1. Heat the milk and sugar in a saucepan over medium heat, stirring until the sugar has dissolved. Once the mixture is warm, remove from heat.
  2. In a separate bowl, combine 1/4 cup of cold water with the gelatin and whisk until it has completely dissolved. Add the gelatin mixture to the warm milk mixture and stir well.
  3. Add the chopped peaches, roasted pistachios, honey, vanilla extract, and salt to the mixture and stir well.
  4. Pour the mixture into a mold and place it in the refrigerator for at least 2 hours or until it has set.
  5. Once the blancmange is set, remove it from the mold and slice into portions.
  6. Decorate with additional roasted pistachios and chopped peaches before serving.
